Director of Culinary Services

Kirby Pines Retirement Community, Memphis, TN

The Director of Culinary Services will be responsible for the day to day food service operations including recruitment, staffing, budgeting, strategic planning, and vendor negotiations. The successful candidate will assure high standards of quality and service including menu development, catering and retail venue management. The Director of Culinary Services is responsible for the overall satisfaction of the dining program, adherence to regulatory requirements including modified diets and standards of nutrition, sanitation and safety, and training.

Preferred Qualifications:

  • B.S. Degree in Food Services Technology or related field; or A.A. Degree plus 5 years of directly related experience
  • Minimum of 3-5 years’ experience in retirement or senior housing preferred
  • 5 plus years of direct food service operational management experience in a fine dining/hotel/country club setting, with inventory, purchasing knowledge and control
  • Excellent knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Excellent customer service skills and experience
  • Experience with P&L accountability highly desirable
  • ServSafe Certified
  • Certified Dietary Manager certificate desirable

 


Purchasing/Shipping & Receiving Agent

Kirby Pines Retirement Community, Memphis, TN

The Purchasing/Shipping & Receiving Agent is multi-faceted, fast paced and provides an opportunity to work in a team environment.  The PSRA is responsible for checking in and counting all deliveries, and keeping products stored in a neat and organized manner; coordinates purchasing for various departments; provides controls and consistency for all products ordered; processes requisitions/PO’s; conducts pricing comparisons and at times creates selection criteria; orders, maintains and completes monthly inventories; able to routinely lift, stock and deliver products of 25 lbs.  Must have the ability to establish and maintain effective relationships with vendors, and internal stake holders.

Preferred Qualifications:

  • Associates Degree
  • Three years of previous experience as a purchasing agent or related position
  • Solid knowledge and understanding of basic purchasing procedures, policies and systems
  • Able to negotiate price and product to meet budgetary constraints
  • Proficient computer skills including Microsoft Office, Excel and Outlook
  • Accurate and precise attention to detail
  • Excellent verbal and written communication skills
  • Ability to work well with team members, management and a large variety of vendors
